کاهش گلوکوزینولات ها در کنجاله کلزا به روش تخمیر حالت جامد و اثرات آن بر عملکرد و جمعیت میکروبی دستگاه گوارش جوجه های گوشتی

چکیده

این آزمایش به منظور بررسی کاهش گلوکوزینولات­ها در کنجاله کلزا به روش تخمیر حالت جامد و اثرات آن بر عملکرد و جمعیت میکروبی دستگاه گوارش انجام شد. تخمیر کنجاله کلزا با کشت مخلوط مایع حاوی لاکتوباسیلوس اسیدوفیلوس، باسیلوس سابتیلیس و آسپرژیلوس نایجر در نسبت 1 به 2/1 انجام شد. پس از 25 روز تخمیر، مقدار گلوکوزینولات­ها از 21/12 به 93/3 میکرومول در گرم کنجاله کاهش یافت. تعداد 300 قطعه جوجه گوشتی سویه کاب 500 در قالب طرح کاملاً تصادفی به 5 تیمار آزمایشی با 4 تکرار و هر تکرار با 15 جوجه اختصاص داده شد. تیمارهای آزمایش شامل جایگزینی صفر، 50 و 100 درصد کنجاله کلزای خام و یا تخمیری با کنجاله سویا در جیره غذایی بودند. نتایج آزمایش نشان دادند که کنجاله کلزای تخمیری در مقایسه با کنجاله کلزای خام در جیره سبب بهبود عملکرد جوجه­های گوشتی شد(05/0>P) و حتی عملکرد گروه تغذیه شده با جیره حاوی 50 درصد کنجاله کلزای تخمیری مشابه با گروه تغذیه شده با جیره شاهد بود. چربی محوطه بطنی در تیمارهای حاوی کنجاله کلزای تخمیری نسبت به سایر تیمارها به طور معنی­داری کمتر بود (05/0>P). جمعیت باکتری­های اسید لاکتیکی در چینه­دان جوجه­های گوشتی تغذیه شده با جیره­های حاوی کنجاله کلزای تخمیری به طور معنی­داری بیشتر ولی جمعیت کلی­فرم­ها به طور معنی­داری کمتر از سایر گروه­ها بود (05/0>P). نتایج نشان دادند که استفاده از کنجاله کلزای تخمیری در مقایسه با کنجاله کلزای خام سبب بهبود عملکرد و تعادل فلور میکروبی دستگاه گوارش جوجه­های گوشتی می­شود و در نتیجه امکان استفاده از کنجاله کلزای تخمیری به عنوان یک منبع پروتئینی جایگزین برای کنجاله سویا در جیره غذایی جوجه­های گوشتی وجود دارد.
