تعیین ارزش غذایی و انرژی قابل سوخت و ساز دو واریته خرما

چکیده

این آزمایش در سه مرحله جهت تعیین ترکیب شیمیایی، قابلیت هضم و انرژی قابل سوخت و ساز ظاهری و حقیقی بخش‌های مختلف دو واریته خرمای جمع‌آوری شده از استان کرمان (مضافتی و فرکان) انجام شد. در مرحله اول ترکیب شیمیایی میوه، هسته و خرمای کامل اندازه‌گیری گردید. در مرحله دوم، قابلیت هضم و انرژی قابل سوخت و ساز نمونه‌ها به روش تغذیه اجباری با استفاده از 35 قطعه خروس بالغ لگهورن و جمع‌آوری فضولات به مدت 48 ساعت اندازه گیری شد و در مرحله سوم با استفاده از روش رگرسیون پله‌ای، معادله‌هایی برای برآورد انرژی قابل سوخت و ساز از روی ترکیب شیمیایی و مقادیر قابلیت هضم تعیین گردید. نتایج این بررسی نشان داد که خرمای کامل و بدون هسته از ارزش غذایی بالاتری برخوردار می‌باشند، درحالی‌که هسته و تفاله خرما دارای الیاف خام بیشتر و در نتیجه انرژی قابل سوخت و سازکمتری هستند. همچنین بررسی نتایج نشان داد هسته و تفاله نوع مضافتی، دارای چربی خام و الیاف خام بیشتری در مقایسه با واریته فرکان می‌باشند. برخلاف هسته و تفاله خرمای فرکان که انرژی قابل سوخت و ساز کمی داشتند، AME و AMEn هسته و تفاله خرمای مضافتی به ترتیب 1769، 1786، 1924 و 2212 کیلوکالری در کیلوگرم ماده خشک تعیین گردید. در کل، واریته مضافتی دارای ارزش غذایی بالاتری در مقایسه با واریته فرکان بود. در پایان، بهترین معادله‌ها برای برآورد انرژی قابل سوخت و ساز، از روی ترکیب شیمیایی و مقادیر قابلیت هضم محاسبه و ارائه گردید.
