اثرات اسانس شیرین‌بیان بر عملکرد و پایداری اکسیداتیو گوشت در جوجه‌های گوشتی

چکیده

این آزمایش، به منظور بررسی اثرات سطوح اسانس شیرین‌بیان بر عملکرد، کیفیت گوشت و پایداری آن به اکسیداسیون، با استفاده از 625 قطعه جوجه گوشتی آرین ، در قالب طرح کاملاً تصادفی با پنج تیمار و پنج تکرار و 25 قطعه پرنده در هر تکرار اجرا شد. تیمارها شامل جیره پایه (گروه شاهد)، آنتی بیوتیک آویلامایسین (150 میلی‌گرم در کیلوگرم)، پروبیوتیک(100 میلی‌گرم در کیلوگرم)، و دو سطح اسانس شیرین‌بیان(200 و 400میلی‌گرم در کیلوگرم) بودند. همه جیره‌ها در طول دوره از انرژی و پروتئین یکسانی برخوردار بودند. استفاده از اسانس شیرین‌بیان به میزان200 میلی‌گرم در کیلوگرم جیره، افزایش وزن روزانه، خوراک مصرفی و ضریب تبدیل را به طور معنی‌داری افزایش داد (05/0p<). در زمان صدوپنجاه دقیقه بعد از القاء اکسیداسیون، کمترین و بیشترین میزان تولید مالونیل آلدهید به ترتیب در گوشت پرندگان شاهد و پرندگانی که سطح 400 میلی‌گرم در کیلوگرم اسانس شیرین‌بیان را دریافت کردند مشاهده شد(05/0P <). اثر تیمارهای آزمایشی بر ظرفیت نگهداری آب در گوشت ران معنی‌داری نبود. نتایج این پژوهش نشان داد، اضافه کردن 200 میلی‌گرم در کیلوگرم اسانس شیرین‌بیان در جیره می‌تواند ضمن بهبود مصرف خوراک، افزایش وزن و ضریب تبدیل غذا، پایداری گوشت را در برابر اکسیداسیون افزایش دهد.
